Description

This Marinated Cherry Tomatoes recipe is a quick and flavorful dish perfect as a fresh side or a topping for salads and bruschetta. Combining juicy cherry tomatoes with fresh parsley, garlic, and light Italian dressing, this easy recipe enhances the natural sweetness of tomatoes with a zesty, herby marinade that can be prepared in minutes and enjoyed after a few hours of marinating.

Ingredients

Tomatoes

  • 2 lb cherry tomatoes

Herbs and Aromatics

  • 1/2 bunch parsley (about 1/2 cup finely chopped)
  • 2 large garlic cloves (minced)

Dressing

  • 1 1/2 cups light Italian dressing (or up to 2 cups, enough to just cover the tomatoes)

Instructions

  1. Prepare Tomatoes: Rinse the cherry tomatoes thoroughly under cool running water, then cut each tomato in half to help them absorb the marinade better.
  2. Mix Ingredients: Place the halved tomatoes in a glass mixing bowl or a quart-sized glass jar with a lid. Add the finely chopped parsley and minced garlic to the tomatoes.
  3. Add Dressing: Pour 1 1/2 to 2 cups of light Italian dressing over the tomatoes, using enough to just barely cover them. Stir the mixture gently to coat all the tomatoes evenly with the dressing and herbs.
  4. Marinate: Cover the bowl or seal the jar with a lid. Let the tomatoes marinate at room temperature for at least 2 to 4 hours to develop flavor, or refrigerate overnight for a more intense taste. Serve chilled or at room temperature as desired.

Notes

  • Using a glass container for marinating helps prevent any reaction with the acidity of the dressing.
  • Adjust the amount of Italian dressing based on how saucy you want the tomatoes.
  • For best flavor, allow marinating overnight in the refrigerator.
  • This recipe makes a great accompaniment to grilled meats, sandwiches, or can be used as a topping for bruschetta or pasta.
  • Cherry tomatoes can be substituted with grape tomatoes if desired.
