- 1 pound grape or cherry tomatoes, halved
Marinade
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar
- 1 to 2 cloves garlic, grated
- 1 tablespoon finely chopped basil
- 1/2 tablespoon finely chopped fresh parsley
- 1 teaspoon finely chopped fresh thyme
- Dash of crushed red pepper flakes
- Kosher salt, to taste
Instructions
- Combine Ingredients: In a medium bowl, add the halved tomatoes, olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, crushed red pepper flakes, and kosher salt. Stir well until all ingredients are evenly combined.
- Marinate the Tomatoes: Wrap the bowl tightly with plastic wrap and leave it out at room temperature. Allow the tomatoes to marinate for at least 30 minutes, though 1 to 2 hours is ideal for maximum flavor absorption. Stir the tomatoes once or twice during this time to ensure even marination.
- Store if Needed: If marinating for longer than 2 hours, transfer the bowl to the refrigerator to keep the tomatoes fresh until ready to serve.
