Description

These Marbled Pumpkin Cheesecake Bars combine a rich, creamy cheesecake base with the warm flavors of pumpkin and pumpkin pie spice, all swirled together over a chocolatey Nilla wafer crust. Ingredients

Crust

  • 2 cups Nilla wafer crumbs (about 60 cookie wafers or half a bag from an 11-ounce box)
  • 1/3 cup cocoa powder
  • 1/3 cup powdered sugar
  • 1/2 cup butter, melted

Filling

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 can (14 ounces) sweetened condensed milk
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 can (15 ounces) pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice


Instructions

  1. Preheat Oven and Prepare Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the Nilla wafer crumbs, cocoa powder, powdered sugar, and melted butter. Press this mixture firmly and evenly into the bottom of a 13x9 inch baking pan to form the crust.
  2. Blend the Filling: In a large bowl, beat the softened cream cheese until fluffy. In a separate glass measuring cup, combine the sweetened condensed milk, eggs, and vanilla extract. Gradually pour this wet mixture into the cream cheese bowl and stir gently until blended.
  3. Layer the Batter: Pour half of the cream cheese filling over the prepared crust in the pan and set the pan aside.
  4. Add Pumpkin Flavor: To the remaining cream cheese batter in the mixing bowl, add the pumpkin puree and pumpkin pie spice. Stir well using a whisk to thoroughly combine the ingredients.
  5. Swirl the Batter: Spoon the pumpkin batter in dollops over the plain cream cheese layer in the pan. Use a table knife to swirl the pumpkin batter through the vanilla layer by twisting and turning the knife to create a marbled effect.
