  • 2 cups mango (fresh or frozen, thawed), diced
  • 1 cup Greek yoghurt (full fat, plain)
  • 1 tsp vanilla (paste or extract)


Instructions

  1. Prepare Ingredients: If using frozen mango, thaw it completely. Dice the mango into small, even pieces to ensure smooth blending.
  2. Blend: Combine the diced mango, Greek yoghurt, and vanilla paste or extract in the bowl of a stick blender or food processor. Blend the mixture until it becomes completely smooth and creamy.
  3. Fill Moulds: Spoon the mango-yoghurt mixture into silicone popsicle moulds or small plastic cups. Carefully insert popsicle sticks into the center of each filled mould or cup.
  4. Freeze: Arrange the moulds or cups on a tray for easy handling and place them in the freezer. Let the popsicles freeze overnight, or at least 6 hours, to set completely.
  5. Remove Popsicles: To unmould, either gently pull on the sticks or if using plastic cups, briefly dip the cups in warm water to loosen the popsicles for easier removal.
  6. Store: Store the popsicles in an airtight container in the freezer. For best texture and flavor, consume within two weeks.

Notes

  • Use ripe mangoes for the best natural sweetness and flavor.
  • If you prefer less creamy popsicles, substitute some of the Greek yoghurt with coconut milk.
  • Vanilla paste gives a more intense flavor than extract but either will work well.
  • Make sure the mango is fully thawed if using frozen fruit to avoid icy popsicles.
  • To speed up serving, run the popsicle mould under warm water for a few seconds before attempting removal.
