Ingredients

Pasta and Lobster

  • 4 ounces macaroni or shell pasta
  • 1 lobster tail, fresh or frozen

Cheese Sauce

  • 4 tablespoons unsalted butter, divided use
  • 1 cup whole milk
  • 2 tablespoons flour
  • 1 cup grated Gruyere cheese
  • 1/2 cup grated sharp Cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly grated black pepper
  • Pinch of freshly grated nutmeg

Topping

  • 1/2 cup Panko bread crumbs


Instructions

  1. Preheat and Prepare Baking Dishes: Preheat your oven to 375°F (190°C). Lightly grease two 0.6-liter oval baking dishes with cooking spray or butter to prevent sticking during baking.
  2. Cook Pasta: Bring a large pot of salted water to a boil. Cook the macaroni or shell pasta until just shy of al dente, about 1 minute less than the package instructions. Drain and set aside.
  3. Prepare Lobster: Using kitchen shears, cut along each side of the lobster tail shell and remove the lobster meat. Chop the meat into roughly 1-inch chunks for even distribution in the dish.
  4. Sauté Lobster: Melt 1 tablespoon of butter in a skillet over medium-high heat. Add the lobster chunks and sauté for 3-4 minutes, stirring occasionally. The lobster will turn opaque and firm. Remove from heat and let cool slightly as it will finish cooking in the oven.
  5. Make Béchamel Sauce: In a saucepan, melt 2 tablespoons of butter over medium-low heat. Sprinkle in the flour and whisk continuously for 2 minutes to make a roux.
