Description
A bright and flavorful Lemon Rice recipe that is simple to prepare, using basmati rice cooked in vegetable stock with a hint of turmeric and fresh lemon juice. This dish is perfect as a light meal or a tasty side, offering a refreshing citrus twist and vibrant yellow color.
Ingredients
Rice and Cooking Base
- 1 cup long grain rice (basmati, rinsed well)
- 1 ⅓ cups vegetable stock
- 1 tablespoon unsalted butter (or olive oil)
- 2 tablespoons lemon juice
- 1 teaspoon salt
- ⅛ teaspoon ground turmeric
To Garnish
- Chopped fresh parsley
- Lemon wedges
Instructions
- Soak and Rinse the Rice: Place the rice in a bowl and cover with water. Let it soak for 15 minutes to soften the grains. Then transfer the rice to a colander and rinse under running water until the water runs clear, ensuring excess starch is removed.
- Cook the Rice: In a saucepan, combine the soaked rice, vegetable stock, butter (or olive oil), lemon juice, salt, and ground turmeric. Bring this mixture to a rolling boil over medium-high heat.
- Simmer Gently: Once boiling, reduce the heat to the lowest setting. Cover the saucepan with a lid and cook the rice undisturbed for 15 minutes. Avoid lifting the lid to keep the steam trapped inside for even cooking.
- Fluff and Serve: After cooking, remove the saucepan from heat and take off the lid. Use a fork to gently fluff the rice to separate the grains. Garnish with chopped fresh parsley and serve warm with lemon wedges on the side for an added burst of citrus flavor.
Notes
- Rinsing and soaking the basmati rice removes excess starch, preventing it from becoming sticky.
- If you prefer, olive oil can be used instead of unsalted butter for a vegan option.
- Do not stir or peek while the rice is cooking to ensure even steam cooking and fluffy texture.
- For additional flavor, toasted mustard seeds or curry leaves can be added during cooking.
- This lemon rice pairs well with grilled vegetables, curries, or as a refreshing standalone side.
