Description

This refreshing Lemon Mousse recipe features a light and airy citrus mousse made with homemade lemon curd folded into whipped cream. It's perfect as a delicate dessert that balances tangy lemon flavor with creamy sweetness, served chilled to delight on warm days or any special occasion.

Ingredients

For the Lemon Curd

  • 1 tablespoon lemon zest (finely grated, from 1 medium lemon)
  • ¼ cup fresh squeezed lemon juice (from 1-2 medium lemons)
  • 2 large egg yolks (at room temperature)
  • ½ cup granulated sugar

For the Mousse

  • 1¼ cup whipping cream (cold)

Instructions

  1. Heat the Lemon Mixture: In a medium heat-proof bowl set over a pot of simmering water (double boiler), warm the fresh lemon juice and lemon zest together, stirring occasionally to release the flavors.
  2. Whisk the Egg Yolks and Sugar: In a small bowl, whisk the egg yolks and granulated sugar until smooth and pale in color, indicating the sugar has started to dissolve and the mixture is aerated.
  3. Temper the Eggs: Gradually add the warm lemon juice mixture to the egg yolk and sugar mixture in a slow, steady stream while continuously whisking to prevent the eggs from curdling or scrambling.
  4. Cook the Lemon Curd: Return the combined mixture to the heat-proof bowl over the simmering water. Stir constantly with a wooden spoon for about 10 to 15 minutes until the curd thickens enough to coat the back of the spoon.
  5. Strain and Cool: Remove the bowl from heat. Strain the lemon curd through a fine mesh strainer to remove lemon zest pieces. Let it cool for 10 minutes, then cover with plastic wrap directly on the surface to avoid forming a skin. Allow to cool completely to room temperature, about 1 hour.
  6. Whip the Cream: Using an electric mixer, whip the cold whipping cream until stiff peaks form, ensuring it is light and voluminous.
  7. Fold the Lemon Curd: Gently fold the cooled lemon curd into the whipped cream using a rubber spatula. Fold carefully to combine while preserving the mousse’s airy texture.
  8. Chill and Serve: Spoon the finished mousse into serving dishes. Cover with plastic wrap and refrigerate for at least 3 hours to set and chill before serving.

Notes

  • Note 1: Use fresh lemons for the best flavor and zest them finely to avoid bitter pith.
  • Note 2: Adjust lemon juice quantity based on lemon size and desired tartness.
  • Note 3: Use cold whipping cream straight from the fridge to whip properly.
  • Note 4: Use a double boiler method to gently heat the lemon juice without cooking it too rapidly.
  • Note 5: Tempering eggs prevents them from scrambling when heated.
  • Note 6: Constant stirring prevents curd from burning and ensures smooth texture.
  • Note 7: Covering the curd while cooling prevents skin formation which can cause texture issues.
  • Note 8: Do not overwhip cream to avoid turning it into butter.
  • Note 9: Folding gently preserves the light mousse texture.
