Description

This Lemon Magic Cake is a delightful and airy dessert that combines the zesty freshness of lemon with a magical dual-textured cake made by folding light egg whites into a rich batter. Baked to a light golden perfection, this cake is perfect for any occasion and yields a tender, moist texture with a subtle tangy flavor.

Ingredients

Eggs

  • 4 large eggs (yolks and whites separated)

Dry Ingredients

  • ¾ cup (150g) sugar
  • ¾ cup (115g) all purpose flour

Dairy & Fats

  • 1 stick or ½ cup (125g) butter, melted
  • 1 ¾ cup (42 cl) lukewarm milk

Flavorings

  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) fresh lemon juice
  • Zest from one lemon

Topping

  • Icing sugar for dusting the cake

Instructions

  1. Preheat and prepare dish: Preheat your oven to 325°F (160°C). Grease an 8 x 8 inch baking dish or line it with parchment paper for easy removal of the cake.
  2. Beat egg whites: Separate the eggs and place the egg whites in a medium-sized bowl. Beat the whites until stiff peaks form. Set aside carefully.
  3. Mix yolks and sugar: In another bowl, beat the egg yolks with the sugar until the mixture becomes light and fluffy. This step incorporates air and adds volume to the cake.
  4. Add butter and vanilla: Add the melted butter and vanilla extract to the yolk mixture. Beat well for one to two minutes to combine all ingredients thoroughly.
  5. Add flour: Gradually add the all-purpose flour to the wet mixture and mix until well incorporated without overmixing to avoid toughening the batter.
  6. Incorporate lemon: Stir in the fresh lemon juice and zest, then slowly add the lukewarm milk while beating to create a smooth batter.
  7. Fold in egg whites: Add one third of the beaten egg whites into the batter and gently fold with a spatula to preserve their airiness. Repeat with the remaining egg whites in two more additions. The batter should have some visible white bits of egg whites floating.
  8. Bake the cake: Pour the batter into the prepared baking dish and bake for about 50 minutes. Check around 45-50 minutes for a lightly golden top and firmness to the touch, as oven times may vary.
  9. Cool and dust: Allow the cake to cool completely in the dish before dusting generously with icing sugar to finish.

Notes

  • Be gentle when folding in egg whites to keep the cake light and fluffy.
  • The baking time depends on your oven; start checking for doneness at 45 minutes.
  • Use fresh lemon juice and zest for the best flavor.
  • Serving the cake chilled enhances the lemon flavor and texture.
  • Dust with icing sugar just before serving to keep it fresh and visually appealing.
