Ingredients
Chicken Marinade
- 2 pounds chicken breast (cut or pounded into thin cutlets)
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 4 garlic cloves, minced
- 2 tablespoons Greek seasoning
Cooking
- 1 tablespoon olive oil (for cooking)
Lemon Feta Topping
- 4 ounces feta cheese (crumbled)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest (from one lemon)
- 1 tablespoon chopped fresh parsley (plus more for garnish)
- 1 teaspoon dried dill (or 1 tablespoon fresh dill)
- Salt and pepper to taste
Instructions
- Marinate the Chicken: Combine the chicken cutlets with 1 tablespoon of olive oil, 2 tablespoons lemon juice, minced garlic, and Greek seasoning. Mix thoroughly to ensure each cutlet is evenly coated with the marinade.
- Sear the Chicken: Heat a large skillet over medium-high heat and add the remaining tablespoon of olive oil. Once the oil is hot, place 3-4 chicken cutlets in a single layer in the pan. Let them sear undisturbed for 3 minutes, then flip and cook for an additional 2-4 minutes until the internal temperature reaches 165°F and the chicken is cooked through. Remove from the pan and repeat with the remaining cutlets.
- Prepare the Lemon Feta Topping: In a bowl, mix the crumbled feta cheese, 1 tablespoon olive oil, 1 tablespoon lemon juice, lemon zest, chopped parsley, and dill. Use a fork to mash and blend the mixture until well combined. Taste and adjust seasoning with salt and pepper as needed.
- Assemble and Serve: Return the cooked chicken cutlets to the skillet and generously top each with the lemon feta mixture. Garnish with additional fresh parsley before serving.
Notes
- For juicier chicken, marinate for at least 15 minutes before cooking.
- You can substitute chicken thighs for breast if preferred, adjusting cook time accordingly.
- Use fresh dill when possible for a brighter flavor.
- Serve with a side of roasted vegetables or a fresh Greek salad for a complete meal.
- Leftover topping can be stored in an airtight container in the refrigerator for up to 3 days.
