Ingredients
Meat and Seasonings
- 1 pound 80/20 ground beef
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Pasta
- 12 whole lasagna noodles
Cheese and Sauces
- 14.4 ounces canned diced tomatoes
- 16 ounces ricotta cheese
- 16 ounces cottage cheese
- 1 cup marinara sauce (your favorite pasta sauce)
- 8 ounces mozzarella cheese, grated
Garnish
- 1 tablespoon fresh basil, chopped
Instructions
- Boil noodles: Boil the lasagna noodles until al dente according to package instructions. Remove and rinse with cold water to stop cooking, then drain well.
- Preheat oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the roll ups.
- Cook beef: Pan-fry the ground beef in a skillet over medium heat. Add onion powder, garlic powder, pepper, and salt while cooking. Drain any excess grease and transfer the cooked beef into a large mixing bowl.
- Create mixture: To the bowl with the cooked beef, add cottage cheese, ricotta cheese, and canned diced tomatoes. Mix all ingredients thoroughly until evenly combined. Set mixture aside.
- Spray muffin tins: Lightly spray the muffin tin cups with non-stick cooking spray to prevent sticking of the lasagna roll ups.
- Add noodles: Cut approximately 2-inch segments from each lasagna noodle. Line each muffin cup with the noodle strips to form a well or cup that will hold the filling.
- Stuff with fillings: Spoon the prepared meat and cheese mixture evenly into each noodle-lined muffin cup. Top each with about a tablespoon of marinara sauce, then sprinkle evenly with grated mozzarella cheese.
- Bake: Place the muffin tins in the preheated oven and bake for 20 minutes at 350 degrees Fahrenheit, or until the cheese is melted and bubbly.
- Serve: Remove from oven and let the roll ups rest for 10 minutes. Sprinkle with freshly chopped basil before serving for added freshness and flavor.
Notes
- Boiling noodles al dente ensures they hold their shape when rolled and baked.
- Draining excess grease from beef prevents a soggy filling.
- Chilling the roll ups after assembly can help them hold shape better, but is optional.
- Use your favorite marinara sauce to customize flavor.
- These roll ups can be prepared ahead of time and refrigerated before baking.
