Description

Ingredients

Labneh

  • 750 grams plain yogurt (1 large tub)
  • Salt (to taste, start with 1/2 teaspoon)

Toppings

  • 6 ounces smoked salmon
  • 1 Persian cucumber (thinly sliced or chopped)
  • ½ cup cherry tomatoes (halved)
  • ¼ cup Kalamata olives (pitted)
  • 2 tablespoons capers (drained)
  • 1 tablespoon za'atar
  • Fresh dill (for garnish)
  • Fresh chives (for garnish)

Finishing

  • 3 tablespoons extra-virgin olive oil


Instructions

  1. Prepare Labneh: If making your own labneh, start by mixing the plain yogurt with salt to taste, beginning with 1/2 teaspoon. Taste and adjust as necessary.
  2. Strain the Yogurt: Pour the salted yogurt into a nut milk bag, cheesecloth, or paper towel placed over a bowl in a strainer. Place something heavy on top to help press out the liquid.
  3. Refrigerate: Leave the yogurt to strain in the refrigerator for a minimum of 12 hours and up to 48 hours. The longer it strains, the thicker the labneh becomes.
  4. Assemble the Plate: Once thickened, spread the labneh evenly onto a serving plate in a decorative manner.
  5. Add Toppings: Arrange smoked salmon pieces over the labneh followed by cucumber ribbons, halved cherry tomatoes, Kalamata olives, capers, and sprinkle with za'atar.
  6. Garnish: Finish with fresh dill and chives scattered on top for brightness and flavor.
  7. Drizzle Olive Oil: Generously drizzle extra-virgin olive oil over the entire plate.
