Description

Delicious and high-protein Kodiak Cakes waffles made with a blend of power-packed ingredients including banana, Greek yogurt, and chia seeds. These waffles are quick to prepare using a waffle iron, perfect for a nutritious breakfast or snack with optional chocolate chips for a sweet touch.


Ingredients

Dry Ingredients

  • 1 1/4 cups Kodiak Cakes Power Cakes Flapjack & Waffle Mix
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 medium ripe banana
  • 3 large eggs
  • 1 cup milk of choice
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon maple syrup
  • 1 1/2 teaspoons vanilla extract

Add-ins

  • 2 tablespoons chia seeds
  • 1/4 cup mini dark chocolate chips (optional)


Instructions

  1. Preheat the waffle iron: Preheat your waffle iron and spray it lightly with cooking spray to prevent sticking.
  2. Blend the batter: Place all ingredients except the optional chocolate chips into a high speed blender. Blend on high until the mixture is completely smooth.
  3. Rest the batter: Allow the batter to sit for 5 minutes. If it becomes too thick, add a little more milk to achieve desired consistency. Stir in chocolate chips if using.
  4. Cook the waffles: Pour about 1 cup of batter onto the preheated waffle iron, adjusting the amount according to your waffle iron size. Cook until golden brown, approximately 5–6 minutes on setting #2, or until waffles reach your preferred level of crispness.
  5. Repeat cooking: Continue cooking waffles in batches until all batter is used.
  6. Serve with toppings: Serve waffles topped with your favorite toppings such as banana slices, peanut butter drizzle, chopped walnuts, extra chocolate chips, and maple syrup.
