Kibbeh Nayyeh is a traditional Middle Eastern dish featuring finely ground lean beef mixed with soaked bulgur wheat and aromatic spices. - ¼ cup kamouneh spice mixture
- ¼ cup fresh basil leaves (packed)
- ¼ cup fresh mint (packed, plus more for serving)

Instructions
- Soak Bulgur: Place the bulgur and 1 cup of water in a small bowl and let it soak for 15 minutes until all the water is absorbed. Fluff the bulgur with a fork to separate the grains.
- Prepare Meat Paste: In a food processor, combine the ground beef, seeded red pepper, unsalted butter, and salt. Blend for about 5 minutes, stopping occasionally to scrape down the sides, until the mixture forms a smooth, dough-like ball. Remove and refrigerate in a shallow bowl while preparing the spice mixture.
- Make Kamouneh Mixture: Using the same food processor, add the soaked bulgur, quartered onion, kamouneh spice mixture, fresh basil, and fresh mint. Blend until well combined and smooth.
- Combine Mixtures: Transfer the bulgur and spice mixture on top of the meat paste. Wet your hands with cold water and knead the kamouneh mixture into the meat thoroughly. Continue kneading and adding a bit of water as needed until the mixture becomes smooth and evenly combined, about 5 minutes.
- Shape and Serve: Transfer the kibbeh mixture onto a serving dish, spreading it evenly to cover the surface. Optionally, create decorative designs on the surface using a knife or fork.
- Garnish and Enjoy: Garnish the kibbeh with additional fresh mint leaves and a drizzle of olive oil. Serve with pita bread for a traditional accompaniment.
