These Keto Burger Mini Bites are a flavorful and healthy low-carb snack or appetizer. Made with minced meat, grated vegetables like zucchini, eggplant, cauliflower, carrots, and binding ingredients such as eggs and almond flour, these mini bites are baked to golden perfection. Perfect for keto diet enthusiasts seeking a satisfying, nutrient-packed treat that’s easy to prepare and perfect for sharing.

Ingredients

Meat

  • 500 grams Minced Meat

Vegetables

  • 3 Zucchini
  • 2 Eggplants
  • 1/2 Cauliflower
  • 2 Carrots
  • 1 Onion
  • 1 Garlic clove

Binding & Seasoning

  • 2 Eggs
  • 2 Tablespoons Almond Flour
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  1. Prepare Ingredients: Gather all the ingredients needed for the recipe and ensure everything is clean and ready for processing.
  2. Grate All The Vegetables: Using a grater, finely grate all the vegetables including zucchini, eggplant, cauliflower, carrots, onion, and garlic, creating a shredded mixture ready for combining.
  3. Mix: In a large mixing bowl, combine the grated vegetables. Add the minced meat, two eggs, almond flour, salt, and pepper. Thoroughly mix all ingredients until evenly incorporated into a uniform mixture.
  4. Portion And Bake: Using your hands or a spoon, shape the mixture into mini burger bites. Place each formed bite onto a baking sheet lined with parchment paper to prevent sticking.
  5. Bake: Preheat the oven to 220°C (420°F). Place the baking sheet with the mini bites into the oven and bake for 20 minutes.
  6. Turn And Continue Baking: After 20 minutes, carefully remove the baking sheet and flip each mini bite to the other side. Return them to the oven and bake for an additional 10 minutes to ensure even cooking and a golden crust.
  7. Store: Once baked, allow the mini bites to cool slightly before serving or store any leftovers in an airtight container in the refrigerator.

Notes

  • You can customize the seasoning to taste, adding herbs or spices if desired.
  • Make sure to grate the vegetables finely to help the mini bites hold together better.
  • Almond flour is used here to keep the recipe keto-friendly and gluten-free; you may substitute with another low-carb binder if necessary.
  • These mini bites can be served warm or cold, perfect for meal prep or snacks on the go.
  • Ensure to flip the mini bites during baking to achieve even browning and texture.
