These Keto Breakfast Pockets are a delicious low-carb alternative to traditional breakfast pastries. Made with a cheesy almond and coconut flour dough, they are filled with scrambled eggs, Canadian bacon, and cheddar cheese, perfect for a satisfying and easy breakfast that fits into a ketogenic lifestyle.

  • 8 oz mozzarella cheese (shredded or cubed)
  • 2 oz cream cheese
  • 2/3 cup almond flour
  • 1/3 cup coconut flour
  • 1 egg
  • 2 tsp baking powder
  • 1 tsp salt

Filling Ingredients

  • 2 eggs (scrambled)
  • 4 oz Canadian bacon (or other cooked breakfast meat)
  • 1/2 cup shredded cheddar cheese (or other cheese of your choice)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the breakfast pockets.
  2. Melt Cheeses: Place the mozzarella and cream cheese in a microwave-safe bowl. Microwave for 1 minute, stir, then microwave for an additional 30 seconds. Stir well and microwave for another 30 seconds, until the cheese resembles a smooth, fondue-like consistency.
  3. Make Dough: Combine the melted cheese with almond flour, coconut flour, egg, baking powder, and salt into a food processor. Pulse until a uniform dough forms. If mixing by hand, thoroughly knead the ingredients until well combined.
  4. Shape Dough Circles: Divide the dough into 8 equal portions. Wet your hands and press each portion into a 6-inch circle on parchment paper placed on a baking sheet.
  5. Add Filling: Evenly distribute the scrambled eggs, Canadian bacon, and shredded cheddar cheese over each dough circle.
  6. Seal Pockets: Fold in the edges of each dough circle over the filling and crimp to seal tightly. Place each pocket seam-side down on the parchment-lined baking sheet.
  7. Bake: Bake for 20-25 minutes or until the pockets are golden brown on top and cooked through.
