Description
Kani Salad is a refreshing Japanese-inspired dish made with shredded imitation crab sticks, crisp cucumber, and carrot, all tossed in a creamy, tangy dressing of Japanese mayonnaise, lemon juice, and toasted sesame seeds. Perfect as a light appetizer or a side salad, this recipe comes together quickly and offers a delightful combination of textures and flavors.
Ingredients
Salad Ingredients
- 3.5 oz imitation crab sticks (kanikama)
- 1 Persian cucumber (or approx 1/3 English cucumber)
- 1/2 carrot (or whole if small)
Dressing
- 2 tbsp Japanese mayonnaise (Kewpie mayo)
- 1 tsp lemon juice
- 1 tsp toasted sesame seeds (plus extra for garnish)
Instructions
- Shred Crab Sticks: Shred the imitation crab sticks into thin strips using your hands or a fork for ease. This will create bite-sized, delicate pieces perfect for the salad.
- Prepare Vegetables: Trim the ends off the cucumber and cut it in half so the length matches the shredded crab sticks. Julienne these halves into thin strips. Peel the carrot and cut it into thin, similar-sized strips to match the cucumber and crab for uniform texture.
- Mix Dressing: In a small bowl, combine the Japanese mayonnaise, lemon juice, and toasted sesame seeds. Stir well until the mixture is smooth and evenly blended to form a creamy, citrusy dressing.
- Combine Ingredients: Place the shredded crab, cucumber, and carrot strips into a mixing bowl. Pour the dressing over the salad ingredients and gently toss everything together until all pieces are well coated with the creamy dressing.
- Serve or Store: Serve the salad immediately on a bed of lettuce leaves for a colorful presentation, optionally garnishing with extra toasted sesame seeds on top. Alternatively, store covered in the refrigerator until ready to serve.
Notes
- Kani salad is best enjoyed fresh but can be refrigerated for up to 1 day.
- If you cannot find Japanese mayonnaise, use a regular mayonnaise with a touch of rice vinegar as a substitute.
- To add extra texture, you can sprinkle some chopped green onions or radish on top.
- For a spicier version, add a dash of sriracha or chili flakes to the dressing.
- The salad pairs well with sushi rolls or as a light side dish for Japanese meals.
