Ingredients
Sausage and Vegetables
- 1 lb Italian sausage (ground)
- 1 sweet yellow onion (diced)
- 1/2 cup carrots (finely diced)
- 3 cloves garlic (pressed)
- 4 cups baby spinach (fresh)
Liquids and Sauce
- 1 jar marinara sauce (23 oz)
- 1 cup beef broth
- 1/2 tsp salt
Pasta and Cheese
- 8 oz cheese tortellini (frozen)
- 1/4 cup parmesan cheese (freshly grated)
Instructions
- Brown the Sausage: In a large skillet, brown the Italian sausage over medium heat, stirring and breaking it up as it cooks until fully cooked and browned.
- Sauté Vegetables: Remove the cooked sausage from the skillet. In the remaining grease, cook the diced onions and carrots until the onions are translucent and the carrots are soft. Stir in the pressed garlic and sauté briefly until fragrant.
- Add Liquids and Seasoning: Pour in the marinara sauce, beef broth, cooked Italian sausage, and salt, stirring everything together to combine well.
- Cook Tortellini: Stir in the frozen cheese tortellini and cook over medium heat. When the sauce begins to bubble, reduce heat to low, cover the skillet with a lid, and simmer for 5 minutes.
- Wilt the Spinach: After 5 minutes, remove the lid and turn heat back to medium. Stir in the fresh spinach and cook for another 3-5 minutes, or until the spinach wilts, tortellini is tender, and the sauce thickens.
