Ingredients
Meat and Aromatics
- 1 tablespoon olive oil
- 1/2 pound lean ground beef (or turkey)
- 1/2 a yellow onion, diced
- 1 clove garlic, minced
Herbs and Seasonings
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- freshly ground black pepper, to taste
Tomato Sauce Base
- 1 cup jarred spaghetti sauce
- 2 tablespoons tomato paste
- 1 1/4 cups chicken broth (or water)
- 2 tablespoons Parmesan cheese, plus extra for serving
Pasta
- 6 ounces spaghetti noodles
Instructions
- Activate Sauté Mode: Press the SAUTE button on your Instant Pot Mini to preheat it for cooking the meat and aromatics.
- Cook Ground Beef: Add olive oil and ground beef to the pot. Cook for about 3 minutes, stirring and breaking the beef apart intermittently until it begins to brown.
- Add Onion: Incorporate the diced onion. Stir and cook for about 4 minutes until the onion softens and becomes translucent.
- Add Garlic and Seasonings: Mix in minced garlic, dried basil, oregano, salt, and freshly ground black pepper. Stir thoroughly to combine the flavors.
- Add Sauce Components: Pour in the jarred spaghetti sauce, tomato paste, chicken broth (or water), and Parmesan cheese. Stir very well to ensure all ingredients are evenly mixed.
- Turn Off Sauté: Switch off the Instant Pot’s sauté mode to prepare for pressure cooking.
- Add Spaghetti Noodles: Break the spaghetti noodles in half and layer them evenly on top of the sauce mixture, making sure the noodles are fully covered by the liquid.
- Set Pressure Cook: Close the lid of the Instant Pot. Turn the valve to the 'sealing' position. Press PRESSURE COOK and set the timer for 8 minutes.
- Pressure Release: When cooking is complete, carefully perform a quick release by placing a kitchen towel over the steam valve and gently turning it to release steam. Wait until the float valve drops down indicating all pressure has been released.
- Stir and Adjust Sauce: Open the lid and stir the pasta mixture. It may appear watery initially, but stirring will incorporate the sauce. If you prefer a thicker sauce, press SAUTE again and cook for an additional 2 minutes to reduce excess liquid.
- Serve: Divide the spaghetti into bowls and top with extra Parmesan cheese before serving.
Notes
- Breaking the spaghetti noodles in half helps them fit and cook evenly in the Instant Pot.
- You can substitute ground turkey for a leaner protein alternative.
- Use chicken broth for added flavor, or water for a more neutral base.
- Be careful during the pressure release to avoid burns from the steam.
- If you like a thicker sauce, the sauté step after pressure cooking is important.
