Prepared effortlessly in an Instant Pot, this rice is infused with fresh lime zest, juice, and fragrant cilantro for a bright and refreshing taste in just 18 minutes.
Ingredients
Rice and Liquid
- 2 cups long grain rice
- 2 cups water
Seasonings and Garnish
- Zest from 1 lime
- 1/3 cup cilantro, chopped
- 2 tsp lime juice
- 1 tsp salt
Instructions
- Prepare the Rice: Add the rice and water to your Instant Pot, making sure the rice is fully submerged in the water to prevent a burn notice during cooking.
- Seal the Instant Pot: Place the lid on the Instant Pot and ensure the valve is set to the sealing position to trap steam and build pressure.
- Cook the Rice: Set your Instant Pot to manual mode on high pressure and cook for 3 minutes, which will perfectly cook the rice without overcooking.
- Natural Pressure Release: Allow the Instant Pot to naturally release pressure for 10 minutes after cooking to let the rice finish steaming gently.
- Quick Release Remaining Pressure: After the 10 minutes natural release, carefully switch the valve to release any remaining pressure and wait for the float valve to drop before opening.
- Fluff and Flavor the Rice: Remove the lid and fluff the rice with a spoon to separate the grains. Stir in the lime zest, freshly chopped cilantro, lime juice, and salt to infuse the rice with bright and fresh flavors.
- Serve: Serve immediately as a delicious side dish and enjoy the vibrant cilantro lime flavor.
Notes
- Rinse the rice before cooking if you prefer a less starchy texture.
- If you don’t have an Instant Pot, this recipe can be adapted for stovetop rice by adjusting water and cooking times.
- For extra zest and flavor, add a bit of lime juice after cooking to brighten the taste further.
- Leftover rice can be stored in an airtight container in the refrigerator for up to 4 days.
- This rice pairs well with grilled meats, tacos, or as a base for bowls.
