- ¼ cup beef broth (for deglazing)
Instructions
- Sear the beef: Set your 6-quart Instant Pot to the sauté function and add 1 tablespoon of oil. Season the chuck roast chunks evenly with ¾ teaspoon salt and ¼ teaspoon black pepper. Sear the beef in batches, browning all sides for approximately 4-5 minutes total until nicely caramelized. Remove the meat and set aside.
- Saute and deglaze: Add the remaining 1 tablespoon oil to the pot and sauté the finely chopped onion for 2-3 minutes until translucent and tender. Pour in ¼ cup beef broth and scrape the bottom of the pot with a wooden spoon to loosen any browned bits for extra flavor.
- Make the sauce: In a high-speed blender, combine the chipotle chiles, adobo sauce, ½ cup beef broth, lime juice, apple cider vinegar, molasses, minced garlic, cumin, oregano, paprika, 1 teaspoon salt, and ½ teaspoon black pepper. Blend until smooth, about 30 seconds.
- Add sauce to meat: Pour the blended chipotle sauce into the Instant Pot along with the canned diced green chiles. Stir well to combine. Return the seared beef to the pot, making sure to submerge the meat in the sauce. Place the bay leaves on top.
- Pressure cook: Secure the lid on the Instant Pot and set the pressure release valve to sealed. Select the manual pressure cook function on high pressure and cook for 60 minutes.
- Quick release and shred: When cooking is complete, perform a quick pressure release by carefully turning the valve to venting. Remove the bay leaves, then transfer the beef to a large bowl and shred using two forks until finely pulled apart.
- Mix and reduce liquid: Return the shredded beef to the sauce in the pot and stir thoroughly to coat in the flavorful juices. If desired, use the sauté function on the Instant Pot and cook for 4-5 minutes to reduce excess liquid and thicken the sauce slightly.
- Serve: Serve the barbacoa immediately in toasted tortillas or over rice. Garnish with sliced red onion, avocado, cilantro, and queso fresco to enjoy a classic Mexican meal.
