Black Salsify
- 2 lbs black salsify (1 kg)
Soaking and Boiling Liquid
- 8 tablespoons white wine vinegar (divided)
- 1 ¼ teaspoons fine sea salt (divided, plus more for seasoning)
Cooking and Garnish
- 3 ½ tablespoons butter (50 g)
- 2 tablespoons parsley, freshly chopped
- 2 tablespoons chives, freshly chopped
- Ground black pepper
Instructions
- Prepare soaking water: Fill a large container with about 6 ½ cups (1 ½ liters) of cold water. Add 5 tablespoons of white wine vinegar and 1 teaspoon of fine sea salt. Stir gently to dissolve the salt.
- Scrub black salsify: Using a vegetable brush under running water, thoroughly clean the black salsify to remove all dirt from the surface.
- Peel black salsify: Using a vegetable peeler, peel the roots and cut off the ends. Immediately place each peeled piece into the prepared vinegar-salt soaking water to prevent discoloration.
- Wash salsify: Rub the peeled roots with your hands in the soaking water to ensure all debris is removed.
- Cut black salsify: Cut the salsify into smaller pieces suitable for cooking. Remove any remaining dark spots on the peeled pieces.
- Drain and rinse before cooking: Just before cooking, drain the salsify pieces in a sieve and rinse briefly with cold water to avoid discoloration. Cook immediately afterward.
- Boil water for cooking: Bring 4 ½ cups (1 liter) of water to a boil, adding 3 tablespoons white wine vinegar and ¼ teaspoon fine sea salt.
- Cook black salsify: Add the salsify pieces to the boiling water and bring it back to a boil. Boil for 15-20 minutes depending on thickness until the pieces are tender but still firm (al dente), as they will be cooked further in the pan.
- Drain and dry: Drain the cooked salsify thoroughly and dry them with paper towels to remove excess moisture.
- Melt butter: In a large pan, melt 3 ½ tablespoons (50 g) of butter over medium-high heat.
- Add salsify to pan: Add the drained and dried salsify pieces to the pan with a pinch of salt.
- Sauté black salsify: Sauté the pieces, stirring frequently for 5-7 minutes, until they achieve a deeply golden, shiny appearance and become a bit softer but still al dente.
- Season and garnish: Season with salt and freshly ground black pepper to taste, then stir in 2 tablespoons each of freshly chopped parsley and chives before serving.
