Sandwich
- 4 slices of sandwich bread
- 150 g shredded chicken or turkey
- 200 g sweet peas (frozen or canned)

Gravy
- 2.5 l chicken broth (homemade preferably)
- 100 ml red wine
- 1 branch fresh thyme (optional)
- 1 tbsp cornstarch
- 3 tbsp cold water (for cornstarch mixture)
- 10 g butter
- Salt and pepper to taste
Instructions
- Prepare the homemade gravy: In one or two large pans, combine the chicken broth, fresh thyme branch, and red wine. Bring the mixture to a boil over high heat and let it simmer for at least 30 minutes, stirring occasionally. Lower the flame if the sides of the pan start to darken.
- Reduce the gravy: Continue cooking until the liquid thickens slightly to a milk-like texture, which should take about 40 minutes.
- Make the cornstarch slurry: In a small bowl, mix 1 tablespoon of cornstarch with 3 tablespoons of cold water until fully dissolved.
- Thicken the gravy: Add the cornstarch mixture to the simmering gravy. Cook for an additional 2 minutes, stirring frequently, until the gravy thickens enough to coat the back of a spoon.
- Finish the gravy: Stir in the butter until melted, then season with salt and pepper to taste. Remove the gravy from heat.
- Warm the peas: In a small saucepan, heat the sweet peas in a little olive oil or butter until cooked through and warmed evenly.
- Assemble the sandwich: Lay out the slices of sandwich bread (no need to toast). Evenly distribute the shredded chicken or turkey on each slice.
