Ingredients

For the Fried Chicken Brine

  • 6 boneless, skinless chicken thighs
  • 3 cups buttermilk

  • 3 tbsp kosher salt
  • 2 tsp freshly cracked black pepper
  • 1 tsp chili powder

For the Fried Chicken Dredge

  • 3 cups all purpose flour (sifted)
  • 1 cup cornstarch
  • 1 tbsp baking powder
  • 1 tbsp kosher salt
  • ½ tsp ground rosemary
  • 1 tsp smoked paprika
  • 2 tsp garlic powder
  • 1 tsp granulated honey (optional)

For the Biscuits

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ¼ tsp kosher salt
  • 6 tbsp salted butter (frozen and grated)
  • 2 tbsp honey
  • 1 cup very cold buttermilk
  • 2 tbsp melted salted butter (for brushing on top)
  • 1 tsp honey (for brushing on top)

For Frying

  • Vegetable oil (enough to fill 4 inches in a 4 qt Dutch oven)


Instructions

  1. Brine the Chicken Thighs: In a large bowl, whisk together all brine ingredients including buttermilk, hot sauce, onion powder, garlic powder, smoked paprika, kosher salt, black pepper, and chili powder. Add the chicken thighs, cover with plastic wrap, and refrigerate to marinate for at least 2 hours or up to 24 hours for maximum flavor and tenderness.
  2. Dredge the Chicken: In a medium bowl, combine all dredge ingredients—flour, cornstarch, baking powder, salt, rosemary, smoked paprika, garlic powder, and optional honey. Splash a few teaspoons of the brine into the dredge mixture to help form crispy crags. Pat the brined chicken into the flour mixture and gently shake off excess. Place coated chicken on a plate or baking sheet and repeat with remaining pieces.
