Ingredients
Dough
- 2 eggs
- ¾ cup milk
- ½ teaspoon minced garlic
- 3 cups all-purpose flour
- ½ cup grated parmesan cheese
- ½ teaspoon salt
- 1 ½ tablespoons baking powder
- 1 teaspoon Italian seasoning
- ½ cup cold salted butter (1 stick), cubed
Filling
- 14 ounce jar pizza sauce
- 1 ½ cups shredded mozzarella cheese
- 18 slices pepperoni
- 1 cup cooked and crumbled sausage
Topping
- ½ cup salted butter (1 stick), melted
- 1 tablespoon dried parsley
Instructions
- Preheat Oven: Preheat your oven to 450°F. Prepare two baking sheets by spraying with nonstick cooking spray or lining them with parchment paper.
- Mix Wet Ingredients: In a small bowl, whisk together the eggs, milk, and minced garlic until well combined.
- Combine Dry Ingredients: In a larger bowl, mix the all-purpose flour, grated parmesan cheese, salt, baking powder, and Italian seasoning evenly.
- Cut in Butter: Use a fork or pastry blender to cut the cold cubed butter into the flour mixture, working until no large clumps remain and the texture resembles coarse crumbs.
- Add Wet to Dry Mixture: Pour the egg mixture into the flour and butter mixture and stir until the dough just begins to come together into a loose ball. For easier mixing, you can use a mixer with a dough attachment.
- Knead Dough: Transfer the dough ball to a floured surface and knead about ten times, turning it over and rotating 90 degrees each time. Add more flour if the dough sticks too much.
- Roll Out Dough: Roll out the dough to about ½-inch thickness using a rolling pin.
- Cut Dough Circles: Use a 3-inch biscuit cutter or similar-sized ring to cut out circles. Press or roll them slightly to make them larger and more flexible for filling.
- Fill Dough Circles: Place the dough circles on the prepared baking sheets. Spoon about 1 tablespoon of pizza sauce onto the center of each circle, add 1 tablespoon of shredded mozzarella, a slice of pepperoni, and 1 tablespoon of crumbled sausage.
- Seal Pockets: Fold each dough circle in half over the filling and press the edges together. Use a fork to crimp the edges firmly to seal. If necessary, dampen the edges with a little water to help them stick.
- Bake: Bake the pizza pockets in the preheated oven for 13-15 minutes, or until the crusts turn lightly golden brown.
- Optional Topping: When warm from the oven, brush the tops with melted butter and sprinkle with dried parsley for added flavor and a glossy finish.
Notes
- Make sure to fully seal the edges of each pocket to prevent the filling from leaking during baking.
- If the dough feels too sticky while kneading or rolling, lightly flour your work surface and rolling pin to prevent sticking.
- You can customize the filling by adding vegetables like bell peppers or mushrooms if desired.
- These pockets can be reheated in a toaster oven or conventional oven for best texture.
