Description

A delicious and nutritious High Protein Pumpkin Overnight Oats recipe that's perfect for a quick and healthy breakfast. Combining creamy pumpkin puree, protein powder, and warm spices, this no-cook meal prep option offers a creamy and satisfying start to your day with minimal effort.

Ingredients

Main Ingredients

  • 1/2 cup milk (120g) (almond milk recommended; use dairy milk for higher protein)
  • 1/2 cup old fashioned oats (40g)
  • 1/4 cup pumpkin puree (60g)
  • 1/4 cup vanilla protein powder (30g)
  • 1.5 tsp pure maple syrup (or to taste)
  • 1 tsp chia seeds
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract (optional)

Optional Toppings

  • Chopped nuts (for texture)
  • Reddi-wip & pumpkin pie spice (a little goes a long way!)

Instructions

  1. Combine Ingredients: In a mason jar, meal prep container, or bowl, add the milk, old fashioned oats, pumpkin puree, vanilla protein powder, maple syrup, chia seeds, cinnamon, and vanilla extract (if using). Mix thoroughly until all ingredients are fully combined. Taste the mixture and adjust sweetness or spices as preferred. The flavor will develop but remain consistent after refrigeration, although the texture will become thicker and creamier.
  2. Refrigerate: Cover the container with a lid or saran wrap and place it in the refrigerator. Allow the oats to soak for a minimum of 2 hours. For the creamiest and best texture, let it chill overnight or for at least 8 hours.
  3. Prepare in Advance: To save time during your busy week, prepare multiple jars at once. Store them in the refrigerator where they will stay fresh for 4-5 days. When ready to eat, top with chopped nuts, reddi-wip, and a sprinkle of pumpkin pie spice if desired.

Notes

  • Using dairy milk increases the protein content compared to almond milk.
  • Adjust maple syrup quantity to your taste preference for sweetness.
  • Chia seeds help thicken the oats and add extra fiber and omega-3 fatty acids.
  • The oats will thicken as they soak overnight, so consistency may appear thinner before refrigeration.
  • Overnight oats do not require cooking, making this a perfect no-cook breakfast or snack.
  • Store prepared jars airtight to maintain freshness for up to 5 days.
