Instructions

  1. Preheat Oven: Preheat your oven to 325°F and position the rack in the lower middle section to prepare for slow cooking the stew.
  2. Season the Beef: Pat the beef cubes dry using a clean towel, then season evenly with 2 teaspoons of salt and 1 teaspoon of pepper to ensure full flavor.

  7. Combine Ingredients and Boil: Return the seared beef and its juices to the pot. Pour in the red wine, beef broth, and the cornstarch-water slurry. Stir everything together and bring the mixture to a boil on the stovetop.
  8. Oven Cook (First Phase): Cover the pot with its lid and transfer it to the preheated oven. Let the stew cook undisturbed for 2 hours to tenderize the beef and develop rich flavors.
  9. Add Vegetables and Continue Cooking: After 2 hours, carefully remove the pot from the oven and add the carrots and baby potatoes. Cover again and return to the oven.
