Description

This Healthy Pepper Steak Stir-Fry is a quick and flavorful dish featuring tender flank steak, vibrant bell peppers, and a savory homemade sauce. Ready in just 20 minutes, it's perfect for a nutritious weeknight meal that's both satisfying and packed with fresh ingredients.

Ingredients

Sauce

  • 1/3 cup low-sodium tamari soy sauce or coconut aminos
  • 2 teaspoons sesame oil
  • 1 tablespoon coconut sugar
  • 1 tablespoon arrowroot powder

Steak and Seasonings

  • 1 pound flank steak, thinly sliced against the grain
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons avocado oil or extra-virgin olive oil, divided

Vegetables

  • 2 large green bell peppers, seeded and thinly sliced
  • 1 large red bell pepper, seeded and thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 1 green onion, white and green parts, thinly sliced diagonally (for garnish)

Optional

  • Cooked rice (for serving)

Instructions

  1. Mix the Sauce: In a small bowl, combine the tamari soy sauce (or coconut aminos), sesame oil, coconut sugar, and arrowroot powder. Whisk thoroughly until the mixture is smooth and set aside to allow the flavors to meld.
  2. Cook the Steak: Toss the thinly sliced flank steak with freshly ground black pepper and kosher salt until evenly coated. Heat a medium skillet or wok over medium-high heat and add 1 tablespoon of avocado oil. Sear the steak slices for 1 to 2 minutes, just long enough to develop a brown crust on the outside while remaining slightly pink inside. Remove the cooked steak from the pan and set it aside on a plate.
  3. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of avocado oil. Add the sliced green and red bell peppers along with the sliced yellow onion. Stir and cook for 2 to 3 minutes until the vegetables soften slightly. Add the minced garlic and fresh ginger and stir for about 30 seconds until fragrant, ensuring the aromatics release their full flavor without burning.
  4. Combine Steak and Sauce: Return the cooked steak to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir well to coat all ingredients evenly. Allow the stir-fry to cook for 1 to 2 minutes more, giving the sauce time to thicken and meld with the steak and vegetables.
  5. Serve: Transfer the stir-fry to a serving plate. Garnish generously with the thinly sliced green onions. Serve immediately on its own or over a bed of cooked rice for a more filling meal.

Notes

  • For a gluten-free option, use tamari soy sauce or coconut aminos to avoid traditional soy sauce gluten content.
  • Flank steak should be sliced thinly against the grain for tenderness.
  • Arrowroot powder helps thicken the sauce naturally without altering flavor.
  • Adjust the amount of black pepper to taste for desired spiciness.
  • Cooked rice is optional but recommended for a complete meal.
