These Healthy Oat Flour Crepes are a nutritious twist on the classic French crepe, using oat flour for added fiber and nutrients. Light, thin, and slightly sweetened with maple syrup, they make a delicious breakfast or snack option that’s easy to prepare and perfect for a health-conscious diet.
Ingredients
Wet Ingredients
- 1 1/2 cups (355ml) low fat milk
- 3 large eggs
- 1 1/2 Tbsp real maple syrup
- 1 tsp vanilla extract
- 2 Tbsp (28g) melted butter
Dry Ingredients
- 1 1/3 cups (160g) oat flour (use a scale to measure or scoop and level in a measuring cup)
- 3 Tbsp (29g) all purpose flour
- 1/4 tsp salt
Other
- Avocado oil (or olive oil cooking spray)
Instructions
- Combine Wet Ingredients: Add the low fat milk, eggs, maple syrup, and vanilla extract into a blender.
- Add Dry Ingredients and Butter: To the blender, add the oat flour, all purpose flour, salt, and melted butter.
- Blend Batter: Cover and blend on low speed until well combined and smooth, about 10 seconds.
- Preheat Skillet: Heat a 10-inch non-stick skillet over medium heat.
- Prepare the Pan and Pour Batter: Once heated, spray the inside bottom of the pan evenly with cooking spray. Pour a scant 1/3 cup of crepe batter from the blender into the pan, then immediately tilt and swirl the pan to coat the bottom with a thin, even layer of batter.
- Cook First Side: Let the crepe cook until the bottom is golden brown, then use an offset spatula to gently loosen one side of the crepe.
- Flip the Crepe: Turn the crepe to the opposite side and cook until that side is just golden brown as well. Adjust burner temperature slightly if needed to avoid burning.
- Cool and Repeat: Transfer the cooked crepe to a wire rack to cool. Repeat the process with the remaining batter, keeping cooked crepes warm by stacking them folded in fourths or wrapped in a tea towel.
- Adjust Batter Consistency: Note that the batter will thicken as it rests; if it becomes too thick, thin it out with a few more tablespoons of milk as needed.

- Use a 10-inch non-stick skillet for best results.

- To keep crepes warm and soft, stack them folded in fourths and cover with a tea towel.
