Instructions
- Shred the Cabbage: Thinly slice 5 cups of cabbage using a knife, mandoline, or food processor until finely shredded and ready to mix.
- Add the Veggies: In a large bowl, combine the shredded cabbage, grated carrots, and chopped parsley to create the fresh vegetable base of the coleslaw.
- Make the Dressing: In a separate bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until smooth and well combined.
- Toss It All Together: Pour the prepared dressing over the vegetable mixture and toss thoroughly until all the veggies are evenly coated. Serve immediately or refrigerate for 3–4 days to let flavors meld.
