Ingredients
Fruit
- 1 pound Strawberries (tops removed and quartered)
- 3 Mandarin Oranges (peeled)
- 20 ounce can of Pineapple Tidbits (drained)
- 3 Kiwi (peeled and sliced)
- 1 Mango (peeled and cubed)
- 1 Banana (peeled and sliced)
Dressing
- 8 ounces Cream Cheese (softened)
- 8 ounces Cool Whip
- 1 box Cheesecake Instant Pudding Mix (3.4 ounces)
- 1 cup Milk
Instructions
- Beat Cream Cheese: In a large mixing bowl, beat the softened cream cheese for 1-2 minutes until smooth and creamy. Set aside to prepare the next components.
- Prepare Pudding Mix: In a separate bowl, whisk together the cheesecake instant pudding mix and milk until the mixture is smooth and well combined with no lumps.
- Combine Cream Cheese and Pudding: Add the prepared cheesecake pudding mixture and cool whip to the bowl containing the whipped cream cheese. Mix all ingredients thoroughly until a uniform, creamy dressing forms.
- Add Fruit: Fold in the drained pineapple tidbits and all the prepared fruit pieces gently to avoid breaking the fruit, ensuring the fruit is evenly coated with the creamy dressing. Reserve some slices of kiwi, strawberries, and mandarin oranges for garnish.
- Chill: Cover the bowl and place the salad in the refrigerator to chill for at least 30 minutes or until ready to serve. This allows the flavors to meld and the salad to firm slightly.
- Garnish and Serve: Just before serving, garnish the top of the salad with the reserved slices of kiwi, strawberries, and mandarin oranges for an attractive presentation.
Notes
- This recipe requires no cooking and is best served chilled.
- Use fresh, ripe fruit for the best flavor and texture.
- The salad can be prepared a few hours ahead, but avoid adding banana until just before serving to prevent browning.
- For a lighter version, substitute light cream cheese and reduced-fat cool whip.
- If you prefer, refrigerate overnight to enhance the flavors, but add delicate fruit garnish right before serving.
