Description

This Grilled Avocado Shrimp Ceviche is a fresh and vibrant dish that combines the smoky flavor of grilled avocados with zesty shrimp ceviche. The shrimp is 'cooked' in lime juice and mixed with serrano peppers, shallots, cilantro, and olive oil, then served in perfectly grilled avocado halves for a refreshing and elegant appetizer or light meal.

Ingredients

For the Ceviche

  • 3/4 pound peeled and deveined uncooked shrimp
  • 6 limes, juiced (about 1 cup lime juice)
  • 1-2 serrano peppers, thinly sliced
  • 1 shallot, thinly sliced (about 1/4 cup)
  • 1 tablespoon chopped fresh cilantro

For the Grilled Avocados

  • 3 avocados, cut in half, seeds removed
  • 1 tablespoon olive oil
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Instructions

  1. Marinate the Shrimp: In a bowl, combine the peeled and deveined shrimp with the thinly sliced serrano peppers, sliced shallots, fresh lime juice, and chopped cilantro. Stir well, making sure the shrimp are fully submerged in the lime juice. Cover the bowl with plastic wrap and refrigerate for 30 minutes until the shrimp turn pink and are fully 'cooked' by the acidity of the lime juice.
  2. Grill the Avocados: Preheat your grill to high heat. Brush the cut sides of the avocado halves with olive oil, then sprinkle them evenly with kosher salt and ground black pepper. Place the avocado halves cut side down on the hot grill grates. Grill for about 5 minutes, or until distinct grill marks appear. Remove from the grill and allow them to cool slightly.
  3. Assemble and Serve: Once both the ceviche and grilled avocados are ready, spoon the shrimp ceviche into the grilled avocado halves. Serve immediately while the ceviche is cold and fresh. For the best experience, make sure to scoop some avocado with each bite of ceviche to enjoy the perfect combination of flavors and textures.

Notes

  • Use fresh, high-quality shrimp for the best flavor and texture.
  • The serrano pepper can be adjusted based on your preferred spice level.
  • You can prepare the ceviche ahead of time, but it’s best to assemble just before serving to maintain avocado freshness.
  • Make sure the shrimp are fully submerged in lime juice for complete 'cooking'.
