  • 1/3 cup tahini
  • 3/4 cup chopped fresh parsley
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp chopped fresh tarragon
  • 3 Tbsp extra-virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 anchovy fillet (optional)
  • 1/3 cup water, plus more as needed


Instructions

  1. Combine Ingredients: Place tahini, chopped parsley, dill, tarragon, extra-virgin olive oil, lemon juice, apple cider vinegar, onion powder, garlic powder, kosher salt, black pepper, optional anchovy fillet, and 1/3 cup water into a blender or use an immersion blender in a suitable container.
  2. Blend Until Smooth: Blend all the ingredients until the mixture is smooth and creamy with visible green specks of herbs. If the dressing is too thick, gradually add more water until the desired consistency is achieved.
  3. Adjust Seasoning: Taste the dressing and season with additional salt and/or black pepper as needed to balance the flavors.
  4. Refrigerate: Transfer the dressing to an airtight container or jar and refrigerate. The dressing can be stored for up to 1 week.

Notes
