Description

A vibrant and nutritious Green Goddess Salad featuring a creamy, herbaceous dressing made from fresh spinach, basil, lemon, walnuts, and nutritional yeast. This refreshing salad combines crunchy cabbage, cucumber, and scallions for a perfect light meal or side dish, ready in just 20 minutes.

Ingredients

Salad

  • ½ white cabbage, shredded
  • ½ cucumber, sliced
  • 4 scallions, chopped

Dressing

  • 1 cup spinach
  • 1 cup fresh basil or coriander leaves
  • 1 lemon, juice and zest
  • ¼ cup walnuts
  • ½ white onion or shallot, roughly chopped
  • 1/3 cup nutritional yeast
  • 2 tbsp vinegar (apple cider or white wine vinegar recommended)
  • ¼ cup olive oil
  • Salt to taste

Instructions

  1. Prepare the dressing: Add spinach, basil (or coriander), lemon juice and zest, walnuts, onion or shallot, nutritional yeast, salt, vinegar, and olive oil to a food processor. Blend everything until you get a smooth, creamy consistency.
  2. Assemble the salad: In a large salad bowl, combine shredded white cabbage, sliced cucumber, and chopped scallions. Toss these fresh vegetables gently to mix.
  3. Dress the salad: Pour the prepared dressing over the vegetables in the salad bowl. Toss the salad thoroughly to ensure every ingredient is evenly coated with the flavorful dressing.
  4. Serve: Serve the salad immediately alongside tortilla chips or your favorite protein for a satisfying meal experience.

Notes

  • For a nuttier flavor, lightly toast the walnuts before blending.
  • You can substitute basil with coriander for a different herbaceous profile.
  • This salad is perfect served fresh but can be chilled for up to 2 hours before serving.
  • Pairing with tortilla chips adds a nice crunch, or add grilled chicken or tofu for more protein.
  • Adjust salt and vinegar to taste to balance the dressing as preferred.
