Description

A vibrant and refreshing Green Goddess Cabbage Salad featuring a crunchy mix of cabbage, green onions, and cucumbers tossed in a creamy, herbaceous dressing made from fresh herbs, spinach, and a blend of nuts and nutritional yeast. This salad is perfect as a light side dish or served with crunchy chips or pita bread for extra texture.

Ingredients

Salad Vegetables

  • 1 small head of green cabbage, diced
  • 1 bunch of green onions, diced
  • 3 to 4 baby cucumbers (or 1 English cucumber), finely diced
  • 1/4 cup diced chives

Dressing

  • 1 cup soft herbs (basil, parsley, or dill)
  • 1 cup spinach
  • 1 shallot, peeled
  • 2 garlic cloves, peeled
  • 1/3 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/4 cup walnuts (or pecans, cashews, or hazelnuts)
  • Juice of 2 lemons
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sea salt

Optional for Serving

  • Tortilla chips, pita chips, or pita bread

Instructions

  1. Combine the salad vegetables: In a large mixing bowl, add the diced green cabbage, green onions, cucumbers, and chives. Toss gently to mix all the vegetables evenly.
  2. Prepare the dressing: Place the soft herbs, spinach, shallot, garlic cloves, nutritional yeast, olive oil, nuts, lemon juice, rice wine vinegar, and sea salt into a blender or food processor. Blend for about 2 minutes until the herbs and spinach are finely broken down and the mixture is well combined, forming a creamy dressing.
  3. Toss the salad: Pour the prepared dressing over the bowl of chopped vegetables and toss well to ensure everything is evenly coated with the delicious Green Goddess dressing.
  4. Serve: Serve the salad immediately as a refreshing side dish, or accompany it with tortilla chips, pita chips, or pita bread for added texture and flavor.

Notes

  • This salad is best enjoyed fresh but can be refrigerated for up to 1 day if prepared in advance.
  • Feel free to swap the nuts in the dressing with your preferred type, such as pecans, cashews, or hazelnuts.
  • If you prefer a thinner dressing, add a small amount of water or extra lemon juice while blending.
  • For a vegan and dairy-free option, nutritional yeast adds a cheesy flavor without using cheese.
