Description

A refreshing and nutritious Greek Salad Bowl with tender precooked chicken, crisp vegetables, tangy feta cheese, and a creamy tzatziki sauce, all served on a bed of shredded Romaine lettuce and cauliflower rice. This quick and easy recipe is perfect for a healthy lunch or light dinner, combining vibrant Mediterranean flavors in just 20 minutes.

Ingredients

Salad Base

  • 4 cups shredded Romaine lettuce (224g)
  • 2 cups cauliflower rice (214g) (defrosted if using frozen)

Proteins & Dairy

  • 400 grams precooked chicken (sliced)
  • 4 oz Feta cheese (112g) (cut into small cubes)

Vegetables

  • 1 cup Persian cucumbers (52g) (sliced)
  • 8 oz Tomatoes (227g) (cut into small wedges or grape tomatoes)
  • 1/2 green pepper (130g) (sliced)
  • 1/2 red onion (40g) (thinly sliced)
  • 1/2 cup kalamata olives (55g) (pitted)

Condiments & Garnishes

  • 4 Tbsp tzatziki sauce (60g)
  • 1/4 cup+ red wine vinegar dressing (optional)
  • fresh dill (optional garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare Bowl Base: Add the shredded Romaine lettuce to the bottom of the serving bowls as the fresh, crisp salad base for the dish.
  2. Add Chicken: Layer the sliced precooked chicken evenly over the lettuce. Rotisserie chicken works wonderfully for ease and flavor.
  3. Add Vegetables: Arrange the sliced Persian cucumbers, tomato wedges, green pepper slices, red onion slices, and pitted kalamata olives on top of the chicken to build up the vibrant salad layers.
  4. Add Cauliflower Rice: Defrost the cauliflower rice if frozen and then distribute it evenly over the salad to add texture and nutrition.
  5. Top with Cheese and Dressings: Sprinkle the feta cheese cubes over the salad. Drizzle with red wine vinegar dressing or plain red wine vinegar, followed by dollops of creamy tzatziki sauce for that classic Mediterranean flavor.
  6. Garnish and Season: Finish by garnishing with fresh dill if desired. Season with salt and pepper to taste. Serve immediately and enjoy this wholesome Greek Salad Bowl!

Notes

  • Use precooked or rotisserie chicken for convenience and quicker assembly.
  • The salad components can be adjusted based on your preference or seasonality of vegetables.
  • Cauliflower rice adds a low-carb alternative to grains and boosts the salad’s fiber content.
  • Fresh dill is optional but adds an authentic and aromatic touch to the salad.
  • For a vegan version, omit chicken and feta cheese and substitute tzatziki with a vegan-friendly sauce.
  • The salad is best served fresh to maintain crispness of the lettuce and vegetables.
