Instructions
- Preheat Oven: Preheat your oven to 400°F to prepare for baking the potatoes evenly.
- Arrange Potatoes: In a 2-quart baking or casserole dish, arrange the peeled Yukon Gold potato wedges in a single, even layer to ensure uniform cooking.
- Mix Broth and Seasonings: In a large measuring cup, whisk together the chicken broth, lemon juice, 2 tablespoons of olive oil (reserve 1 tablespoon for later if desired), grated garlic, dried oregano, and kosher salt until well combined.
- Pour Mixture Over Potatoes: Pour the lemony broth mixture evenly over the potato wedges, making sure they are well coated.
