Ingredients
Wings and Marinade
- 3.5 lbs chicken wings
- 1/2 cup olive oil
- 1 lemon, zested and juiced
- 6 cloves garlic, minced
- 2 tsp dried oregano
- 2 tsp salt
- 2 tsp black pepper
Dressing
- 1/2 cup olive oil
- 1 lemon, juiced
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- Salt, to taste
- 1/4 cup fresh parsley, chopped
To Garnish
- 3 oz feta cheese, crumbled
Instructions
- Prepare the Wings: Rinse the chicken wings thoroughly and pat them dry with paper towels to ensure a crispy finish when baked.
- Make Marinade and Marinate: In a large bowl, whisk together olive oil, lemon zest and juice, minced garlic, dried oregano, salt, and black pepper. Toss the wings well in this marinade until fully coated. Cover the bowl and refrigerate for at least 2 hours or up to 10 hours to allow flavors to infuse.
- Preheat and Prepare Baking Sheets: Preheat your oven to 375°F (190°C). Line two baking sheets with aluminum foil and place wire racks on them if available to promote even cooking and crispiness.
- Bake the Wings - First Half: Arrange the marinated wings in a single layer on the wire racks. Place one baking sheet on the top oven rack and the other on the bottom rack. Bake for 35 minutes.
- Flip and Swap Racks: Remove the wings from the oven, flip each wing to the other side for even crisping, then swap the baking sheets between the top and bottom racks. Return to the oven and bake for an additional 25 minutes until the wings are crispy and cooked through.
- Prepare the Dressing: While wings bake, whisk together olive oil, lemon juice, cayenne pepper, black pepper, and salt to taste. Add fresh chopped parsley last for a burst of color and freshness.
- Toss Wings with Dressing and Garnish: Once wings are out of the oven, toss them in the prepared dressing until well coated. Transfer to a serving platter, sprinkle generously with crumbled feta cheese, and serve with tzatziki or your favorite dipping sauce.
Notes
- Marinating the wings longer, up to 10 hours, intensifies the Greek flavors.
- Using wire racks on baking sheets helps wings crisp evenly without sitting in fat.
- Adjust cayenne pepper to control the heat level of the dressing.
- Serve with tzatziki sauce for an authentic Greek accompaniment.
- Leftover wings can be refrigerated and reheated in the oven for best texture.
