Description

This Greek Inspired Hummus Toast is a quick and delicious snack or light meal combining the fresh flavors of cucumber, grape tomatoes, and tangy feta cheese atop toasted whole wheat oat bread smeared with creamy Sabra Olive Tapenade Hummus. Ready in just 11 minutes, it’s a nutritious and satisfying option perfect for breakfast, lunch, or a healthy snack.

Ingredients

Vegetables

  • 8 grape tomatoes, sliced in half (about 1/3 cup)
  • 1/4 cup diced cucumber

Bread & Spread

  • 3 slices whole wheat oat bread
  • 1/3 cup Sabra Olive Tapenade Hummus (divided)

Toppings

  • 2 tablespoons feta cheese (divided)

Instructions

  1. Prep the vegetables: Clean the grape tomatoes and cucumber thoroughly, then slice the tomatoes in half and dice the cucumber into small pieces. Set aside.
  2. Toast the bread: Toast the three slices of whole wheat oat bread until they are golden brown and crisp. Remove them carefully from the toaster.
  3. Spread the hummus: Evenly spread 2 tablespoons of Sabra Olive Tapenade Hummus onto each slice of toasted bread, covering the surface completely for a flavorful base.
  4. Add the toppings: Sprinkle the diced cucumbers and halved grape tomatoes evenly over each hummus-coated toast slice. Then, top each toast with a sprinkle of feta cheese.
  5. Repeat and serve: Arrange the prepared toasts on a plate and enjoy immediately while the toast is crisp and the ingredients fresh.

Notes

  • For extra flavor, drizzle a small amount of olive oil or balsamic glaze over the finished toast.
  • You can replace whole wheat oat bread with any other whole grain bread of choice.
  • Adjust feta quantity according to taste preferences for a saltier or creamier topping.
  • This recipe is perfect for a quick breakfast or light lunch and can be doubled for more servings.
  • For a vegan version, substitute feta with a plant-based cheese alternative.
