Ingredients

Eggs & Avocado Mixture

  • 4 hard boiled eggs (cooled and peeled)
  • 1 ripe avocado
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon lemon juice

Bread & Spreads

  • 2 slices bread (any favorite kind)
  • 1 teaspoon mayo (or butter)
  • Hot honey (optional, for drizzling)


Instructions

  1. Boil and cool eggs: Place the eggs in boiling water and cook until hard boiled. Transfer them immediately to an ice water bath to cool completely. Once cold, peel the eggs and set them aside.
  2. Prepare bread with mayo: Take 2 slices of your preferred bread and spread a thin layer of mayo or butter on one side of each slice. Heat a pan over medium heat and place the bread slices mayo side down in the pan. Cook until the bread is crisp and golden brown.
  3. Make avocado mash: In a separate bowl, mash the ripe avocado with lemon juice and a pinch of salt until smooth but still slightly chunky. Optionally add hot honey to the avocado mixture if you enjoy a sweet and spicy flavor.
