Description

This Grapefruit Yogurt Cake is a light and tangy dessert that combines the bright flavors of grapefruit zest and juice with the creamy texture of fat-free yogurt. It’s a moist, subtly sweet cake that’s perfect for any occasion, topped with a delicate grapefruit glaze and optional fresh garnishes for an elegant finish.

Ingredients

Cake

  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs, room temperature
  • 1 cup fat-free plain yogurt
  • 1/3 cup sugar
  • 5 tablespoons grated grapefruit zest
  • 1/4 cup agave nectar or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup canola oil

Glaze

  • 1/2 cup confectioners' sugar
  • 2 to 3 teaspoons grapefruit juice
  • Optional: Grapefruit wheels and fresh mint leaves

Instructions

  1. Prepare the batter: Preheat your oven to 350°F (175°C). In a bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. In a separate large mixing bowl, combine the eggs, fat-free plain yogurt, sugar, grated grapefruit zest, agave nectar or honey, vanilla extract, and canola oil. Mix until smooth and fully incorporated.
  2. Combine and bake: Gradually add the dry flour mixture into the yogurt mixture, stirring gently to create a smooth batter without overmixing. Pour the batter into a 9-inch round baking pan that has been coated with cooking spray to prevent sticking. Place the pan in the oven and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Once baked, remove the cake and allow it to cool completely.
  3. Make and apply glaze: In a small bowl, mix the confectioners' sugar with enough grapefruit juice (2 to 3 teaspoons) to achieve a pourable, drizzling consistency. Drizzle the glaze evenly over the cooled cake, letting some drip down the sides for a beautiful presentation.
  4. Garnish and serve: Optionally, decorate the top of the glazed cake with fresh grapefruit wheels and mint leaves for added freshness and visual appeal. Slice and serve the cake as a delightful, fruity dessert or a refreshing snack.

Notes

  • The cake batter should be mixed gently once flour is added to avoid a dense texture.
  • Use room temperature eggs to ensure better batter consistency.
  • For a more intense grapefruit flavor, increase the grapefruit zest by 1-2 tablespoons.
  • The glaze consistency can be adjusted by adding more or less grapefruit juice depending on your preference.
  • Canola oil contributes to the moist texture but can be substituted with a mild-flavored oil like sunflower if desired.
  • This cake tastes great the next day as the flavors continue to develop.
