Ingredients

Truffle Base

  • 9 ounces good quality white chocolate, finely chopped
  • 1/3 cup heavy cream
  • Zest of one grapefruit
  • 1/4 cup unsalted butter, cubed
  • Pinch of salt
  • 1 vanilla bean, seeds scraped
  • 3 teaspoons grapefruit juice

For Coating

  • Superfine sugar, for dusting


Instructions

  1. Chop White Chocolate: Finely chop the white chocolate and place it in a heatproof bowl. This ensures it will melt evenly and smoothly during the next steps.
  2. Infuse Cream with Grapefruit Zest: Add the grapefruit zest to the heavy cream in a small heavy saucepan. Bring the mixture to a simmer carefully, making sure not to let it boil, then remove from heat to allow the zest to infuse.
  3. Combine Ingredients and Melt: Add the cubed butter and a pinch of salt to the bowl with the white chocolate. Pour the hot grapefruit-infused cream over the chocolate mixture. Melt the ingredients by placing the bowl over a saucepan of simmering water (making sure the water does not touch the bowl). Stir gently until smooth and well combined. Stir in the vanilla bean seeds and grapefruit juice. Chill the ganache mixture for at least 4 hours to firm up.
  4. Form Truffle Balls: Once chilled and firm, use a teaspoon or small cookie scoop to portion out 1-inch balls of ganache. Quickly roll each portion between your palms to form smooth balls, working fast to prevent melting from hand heat.
  5. Coat with Sugar: Immediately sprinkle each truffle with superfine sugar to coat, then place the truffles on a parchment-lined baking sheet.
  6. Set and Store: Refrigerate the truffles for at least 5 minutes before serving to ensure they are set. Store truffles in an airtight container in the refrigerator for up to two weeks.
