Description

Gougères are delightful French cheese puffs made from light and airy choux pastry combined with savory Gruyère cheese. Perfect as an elegant appetizer or party snack, these golden, crispy bites offer a perfect balance of cheesy richness and a fluffy interior. This recipe guides you step-by-step to create authentic Gougères, ideal for impressing guests or elevating your snack game.

Ingredients

Choux Pastry

  • 125 ml (1/2 cup) Water (or half water, half milk)
  • 60 g (1/4 cup) Unsalted Butter
  • 1/3 teaspoon Salt
  • 75 g (1/2 cup) Plain/All-Purpose Flour
  • 2 Medium Eggs (at room temperature)
  • 1 pinch Nutmeg Powder (optional)

Cheese

  • 20 g (about 1/3 cup) Grated Gruyère Cheese
  • Extra grated Gruyère Cheese for topping (optional)

Instructions

  1. Preheat Oven and Prepare Tray: Preheat your oven to 180°C (350°F) and line a baking tray with baking paper or a baking mat to prevent sticking and ensure even baking.
  2. Melt Butter and Heat Liquid: In a small pot, combine water, butter, salt, and nutmeg if using. Heat until butter is completely melted and the mixture starts to simmer, then remove from heat immediately.
  3. Add Flour and Form Dough: Quickly add all the flour at once to the hot liquid mixture. Stir vigorously with a wooden spoon or stiff spatula until the dough comes together into a ball and begins to pull away from the sides of the pot. Return the pot to low-medium heat and stir for 2 minutes to dry out the dough slightly (dehydrate it).
  4. Cool Dough: Transfer the dough to a mixing bowl and stir on medium-low speed for about 5 minutes to cool it down, making it ready to absorb eggs without cooking them.
  5. Incorporate Eggs: Gradually add eggs one at a time, stirring thoroughly after each addition until fully incorporated. The dough should be smooth and elastic. The batter is ready when you can dip a finger in and the dough slowly folds back on itself.
  6. Add Cheese: Fold in the grated Gruyère cheese until just combined, distributing the cheese evenly without overmixing.
  7. Pipe the Batter: Spoon the choux dough into a piping bag fitted with a large round tip. Pipe small mounds onto the prepared baking tray, spacing them slightly apart to allow for expansion during baking.
  8. Optional Cheese Topping: If desired, grate additional Gruyère cheese over each mound to enhance flavor and create a golden crust.
  9. Bake the Gougères: Bake the puffs in the preheated oven for 20 minutes without opening the door. Briefly open the oven to release steam, then close and continue baking for an additional 5 to 10 minutes until the gougères are puffed and golden brown.
  10. Cool and Serve: Remove the gougères from the oven and allow them to cool slightly on a wire rack. Serve at room temperature for the best texture and flavor.

Notes

  • Using half water and half milk instead of only water creates a richer dough with slightly softer texture.
  • Dehydrating the dough on the stove is crucial to prevent soggy gougères by removing excess moisture.
  • Cooling the dough before adding eggs avoids scrambling them and ensures proper consistency.
  • Adding eggs slowly allows you to control dough texture for ideal puffing.
  • The finger test helps determine if the dough has the right elasticity to hold shape when piped.
  • Resisting the urge to open the oven door early ensures proper rising by maintaining steam inside the oven.
