- Chill the Mixture: Transfer the chicken mixture into a container and cover it. Refrigerate for at least 12 hours or until the mixture firms up for easier shaping.
- Prepare for Coating: Set up two bowls—one with the beaten eggs and the other with bread crumbs.
- Shape and Coat Croquettes: Using your hands, shape the chilled mixture into oval or cylindrical croquettes. Dip each croquette into the beaten eggs, then coat thoroughly with bread crumbs to ensure an even crust.
