Beetroot Preparation
- 450g (1lb) beetroot, peeled
- 30ml (2 tbsp) olive oil
- Salt and freshly ground black pepper, to taste
Pastry and Topping
- 1 pack (320g) ready-rolled puff pastry sheet
- 200g (7oz) goat's cheese, crumbled
- 9 walnuts, roughly chopped
- 60g (2oz) rocket/arugula, washed
Instructions
- Preheat oven: Set your oven to 200°C (400°F, gas mark 6) to prepare for roasting the beetroot and baking the tart.
- Slice beetroot: Use a mandolin slicer to cut the peeled beetroot into thin, even slices for quick and uniform cooking.
- Roast beetroot: Arrange beetroot slices in an ovenproof pan, drizzle with olive oil, and season with salt and pepper. Bake for about 20 minutes until tender and cooked through.
- Prepare pastry: Place the puff pastry sheet on a baking tray. Score a small border around the edges with a knife and prick the interior with a fork to prevent excess rising.
- Bake pastry base: Bake the pastry on the shelf below the beetroot for 15 minutes or until puffed and golden brown. Remove from the oven and gently press down the center if risen.
- Assemble tart: Arrange the roasted beetroot slices evenly within the pastry border and sprinkle crumbled goat's cheese on top.
- Cook assembled tart: Return the tart to the oven and bake for 10 minutes, allowing the cheese to soften and warm.
- Add walnuts: Quickly sprinkle roughly chopped walnuts over the tart and bake for an additional 3 minutes to toast the nuts slightly.
- Serve: Remove the tart from the oven, slice into 6 pieces, and serve garnished with fresh rocket (arugula) leaves for a peppery contrast.
