Description

A bright and refreshing Goat Cheese Salad featuring peppery baby arugula, sweet Fuyu persimmons, crunchy candied walnuts, and vibrant pomegranate seeds, all brought together with a luscious vanilla mint yoghurt dressing that adds a creamy, fragrant finish. Perfect for a quick and elegant appetizer or light meal.

Ingredients

Salad

  • 5 ounces baby arugula
  • 1/2 cup crumbled goat cheese
  • 2 firm Fuyu persimmons, peeled and sliced
  • 1/2 cup pomegranate seeds
  • 2 tablespoons candied walnuts

Dressing

  • 1 cup Mountain High vanilla yoghurt
  • 2 teaspoons honey
  • 2 tablespoons thinly sliced fresh mint leaves

Instructions

  1. Prepare the Salad Base: Arrange the baby arugula and peeled, sliced Fuyu persimmons together on a large serving platter for an attractive bed for the toppings.
  2. Make the Dressing: In a small mixing bowl, whisk together the Mountain High vanilla yoghurt, honey, and thinly sliced fresh mint leaves until smooth and well combined. For best flavor, the dressing can be made up to one day in advance, covered, and chilled in the refrigerator.
  3. Assemble and Serve: Just before serving, drizzle the prepared vanilla mint yoghurt dressing evenly over the arranged salad. Top with crumbled goat cheese, pomegranate seeds, and candied walnuts to add contrasting textures and bursts of flavor. Serve immediately to enjoy the freshness of the ingredients.

Notes

  • The vanilla mint yoghurt dressing can be made ahead and stored in the refrigerator for up to 24 hours.
  • Choose firm Fuyu persimmons for slicing to avoid mushy texture.
  • Candied walnuts add sweetness and crunch, but toasted regular walnuts can be substituted if preferred.
  • For a vegan version, substitute goat cheese with a plant-based alternative and use non-dairy vanilla yogurt.
