Ingredients

  • 1/2 cup (12 cl) heavy cream
  • 1/4 cup (65g) granulated sugar
  • 5 oz (140g) fresh goat cheese

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the blueberries.
  2. Whip the cream: In a large bowl, use a stand mixer or hand mixer to whisk the heavy cream and sugar together until stiff peaks form, which usually takes about 5 minutes.
  3. Incorporate the goat cheese: Spoon half of the whipped cream into the bowl with the goat cheese and whisk until smooth. Then, gently fold in the remaining whipped cream to keep the mousse light and airy.
  4. Chill the mousse: Transfer the mousse into small bowls or glasses, cover them, and refrigerate for about one hour to allow it to set and develop flavor.
  5. Roast the blueberries: Spread the blueberries on a baking tray lined with parchment paper and roast them in the oven for 12-15 minutes. Shake the tray regularly to ensure even roasting.
