Description

This Goat Cheese Log with Caramelized Onions & Pistachios combines creamy tangy goat cheese with sweet, richly caramelized onions and a crunchy coating of fresh rosemary and chopped pistachios. Ingredients

For the Caramelized Onions

  • 3-4 tbsp olive oil
  • 1 large yellow onion (or 2 small ones)

For the Goat Cheese Log

  • 8 oz goat cheese
  • 4-6 fresh rosemary sprigs, minced
  • ½ cup chopped pistachios (unshelled)


Instructions

  1. Prepare the Onions: Cut the onion in half and place the cut sides down. Thinly slice the onion halves and add them to a sauté pan with olive oil. Heat over high until it sizzles, then reduce to medium-low.
  2. Caramelize the Onions: Cook the onions slowly for 25-30 minutes, stirring occasionally. If they start to burn, lower the heat and add a splash of water. Add more oil if the pan becomes dry, ensuring the onions become a deep caramel brown without burning.
  3. Combine Onions and Goat Cheese: Remove the caramelized onions (including the oil) from heat and transfer them to a medium bowl. Add the goat cheese and use a rubber spatula to mix until fully combined.
  4. Shape the Log: Lay a sheet of plastic wrap (saran wrap) on the counter. Place the goat cheese mixture in the center and shape it into a log as best as possible.
  5. Wrap and Chill: Fold one end of the plastic wrap over the log, then the other end, rolling the ends tightly to form a compact log. Refrigerate for at least one hour or overnight until firm.
  6. Prepare Toppings: While the log chills, finely chop the rosemary and pistachios and spread them evenly on a cutting board or flat plate.
  7. Coat the Log: Once chilled, unwrap the goat cheese log and roll it in the rosemary and pistachios until fully coated.
  8. Serve: Place the coated log on a cutting board or plate and serve with an assortment of crackers as an appetizer.
