Ingredients
Crust
- 2 cups almond flour
- 1/3 cup coconut oil
- 3 tbsp granular sugar (or erythritol or monk fruit sweetener)
- 1 tsp vanilla extract
Filling
- 24 oz (3 x 8oz containers) cream cheese
- 1/2 cup granular sugar (or erythritol or monk fruit sweetener)
- 1 cup whipping/heavy cream
- Zest of 1 lemon
- 3 tablespoons lemon juice
Raspberry Sauce
- 100 g raspberries (fresh or frozen)
- 1 tbsp granular sugar (or erythritol or monk fruit sweetener)
Garnish
- Additional fresh raspberries
- Fresh mint (optional)
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F. Line the bottom of a 9-inch springform pan with parchment paper and grease the sides to prevent sticking.
- Make crust mixture: In a medium bowl, combine almond flour, coconut oil, sweetener, and vanilla extract. Stir thoroughly to combine into a uniform mixture.
- Press crust: Press the almond flour mixture firmly into the bottom of the prepared springform pan, creating an even layer for the crust.
- Bake crust: Bake the crust in the preheated oven for 12-15 minutes, or until golden brown. Remove from oven and let cool for at least 10-15 minutes to set.
- Beat cream cheese: In a large bowl, use a standing or handheld mixer to beat the cream cheese until soft and creamy, ensuring a smooth texture.
- Add flavorings: Add the sweetener, lemon zest, and lemon juice to the softened cream cheese. Beat again until well incorporated.
- Whip cream: In a separate bowl, whip the heavy cream until stiff peaks form. This adds lightness to the filling.
- Fold whipped cream: Gently fold the whipped cream into the cream cheese mixture using a spatula to maintain airiness and create a smooth filling.
- Assemble cheesecake (optional swirl layer): Spoon half of the filling into the cooled crust. If desired, add a layer of raspberry sauce (see next steps) halfway, then top with the remaining filling.
- Prepare raspberry sauce: Blend raspberries with the optional tablespoon of sweetener and 1-2 tablespoons water until you achieve a smooth, pourable sauce.
- Decorate with sauce: Drizzle the raspberry sauce over the top of the cheesecake in your preferred pattern or add it as a layer inside the cheesecake for extra flavor.
- Chill cheesecake: Refrigerate the assembled cheesecake for at least 4 hours, preferably overnight, to allow it to set properly and the flavors to meld.
- Garnish and serve: Before serving, decorate with additional fresh raspberries, fresh mint leaves if desired, and extra raspberry sauce for a beautiful presentation.
Notes
- For a lower-sugar option, substitute granular sugar with erythritol or monk fruit sweetener.
- Let the crust cool completely before adding the filling to prevent sogginess.
- If using frozen raspberries for the sauce, thaw them first for easier blending.
- Adding the raspberry sauce as a middle layer intensifies the berry flavor and creates a beautiful swirl effect.
- Keep cheesecake refrigerated and consume within 3-4 days for best freshness.
