Instructions

  1. Make the Sauce: In a small bowl, whisk together the coconut aminos, lime juice, peanut or almond butter, maple syrup, sriracha (if using), and minced garlic until smooth to create a flavorful, balanced sauce.
  2. Cook the Veggies and Protein: Heat avocado oil in a large skillet or wok over medium heat. Add the sliced red bell pepper, shredded carrots, and green onions, sautéing for 3-4 minutes until they start to soften. Optionally, add scrambled egg, shrimp, chicken, or tofu to heat through with the veggies.
  3. Add the Veggie Noodles and Sauce: Stir in the spiralized zucchini noodles and pour the prepared sauce over the mixture. Toss gently to coat evenly and cook for 2-3 more minutes until the veggie noodles are tender yet retain a slight crunch.
