- 3/4 cup (80g) almond flour
- 3/4 cup (150g) brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon xanthan gum
- 1/4 teaspoon salt

- 1/2 cup (90g) chocolate chips, divided
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it with butter or oil to prevent sticking.
- Mix Wet Ingredients: In a large bowl, mash the bananas thoroughly with a fork. Add lemon juice, melted butter or coconut oil, Greek yogurt, milk, and eggs. Mix until all wet ingredients are well combined.
- Combine Dry Ingredients: In another bowl, whisk together the gluten-free flour blend, almond flour, brown sugar, baking powder, baking soda, xanthan gum, and salt, ensuring they are evenly distributed.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir gently until just combined, avoiding overmixing to keep the muffins light and fluffy.
- Add Chocolate Chips: Fold in 3/4 of the chocolate chips into the batter, reserving the rest to sprinkle on top for an extra chocolatey finish.
